- Third Course – Chicken and mushrooms – “fried chicken” chicken veloute, black trumpet puree, pickled chicken mushrooms- poultry herbs
- Fourth Course – Lamb wrapped lamb – belly wrapped loin, sweet potato rosti, soubise, crispy kale, frisee
